Some of Galen Rowell's favorites on creativity and perception:

How the Mind Works, Steven Pinker.  (***)  Almost a sequel to Marvin Minsky's Societies of Mind, Pinker makes a compelling case for the evolution of thought and vision in humans from simpler systems found in other animals, and then describes how this might let us perform the miracles of seeing, walking, and thinking which we take for granted every day.  Several sections help explain visual habits and optical illusions, which provides some interesting insight for photographers.

The Artful Eye, Richard L. Gregory (not read yet).

Art, Mind and Brain, Howard Gardner.  (**)  Gardner starts with a review of many of the important milestones in developmental and cognitive psychology, along with miniature biographies of some of the most important scientists.  Some excellent chapters on how children learn, and in particular how they learn art, follow.  The book offers many valuable insights into how we learn and think about art.  I found the extensive sections on the affect of brain damage on various mental processes became tedious, but they were surrounded by other sections on how those processes work in the rest of us which were worth reading.
